Kyoor is a delicacy most loved by Dogra people and it has got great relevance in marriage ceremonies. It is actually a very light and fluffy dish devoured by some as a snack while others enjoy it with some curry. Kyoor is quite famous among kids. This special dogri food item is analogous to pancakes and is usually served as a welcome dish to the guests visiting home for the very first time. It is a crunchy and salty dish served with sugar to maintain a balance of taste.

In wedding ceremonies, kyoor is offered to bridegroom by sister-in laws when he comes to Bride’s home.

This mouth watering cuisine is prepared in the following way:

Ingredients required:

* Maida/ Refined Flour
* Water as per the requirement
* Sugar
* Ghee (clarified butter)
* A non stick pan

Method of preparation:

1. First of all, mix water in the Maida such as the consistency of batter is neither very thick nor thin.

2. . Allow the pan to heat and put some ghee on it, a little more amount of ghee than the one which is normally required for sautéing.

3. Further, dip your fingers into the batter and let if fall on the hot pan in the form of threads creating a circular mesh like structure.

4. In order to give your dish a neat shape, use more batter to make a fine boundary for the kyoor.

5. As per the traditional way, kyoor is supposed to be cooked on one side only so do not flip it over. Make sure to cook the batter for about 2 mins and that too over a moderate heat.

6. Use a spatula to take out kyoor from the pan making sure that the mesh like structure remains unbroken.

7. With the intention to bring crunchiness and a little bit of sweet taste to the kyoor, sprinkle grained sugar on it.

Repeat the process for making every kyoor till the batter finishes.

Kyoor is something which can be found in just one or two restaurants so prepare this delectable dish and enjoy.
